Native Watercraft makes a hybrid kayak/canoe that is designed so you can stand in it. They also have the most comfortable seats on the market. I believe they have a tandem model with two seats.

Stand at your own risk...I'm pretty comfortable with standing and fly casting out of most tandem canoes...But it is a skill, and it takes practice. If you dont float in canoe enough to be comfortable...
